Pieter Walser’s approach to winemaking is to forgo rigid planning. To him, abandoning structure gives wine the space to fully express a journey shaped by the land from where it originates. This wine is a perfect example of that.
In 2007, Pieter reluctantly fell for a Wellington site planted with Old Vine Chenin, Grenache Blanc, and Viognier. Unbeknownst to him at the time, it was once owned by his great–great–great–great–great–
Grapes were picked and whole-bunch pressed together. Fermentation occurred naturally across a mix of vessels—concrete egg tanks, amphorae, and older French oak barrels. The wine received a single sulfur addition during winter and then spent eight months on the lees before blending and bottling.
Expect cooked yellow apples and apricots on the nose with a palate of pear and ginger jam.
