From dinosaur vines high up in the Citrusdal Mountains that have been around for the past century and dot a martian landscape. They're not easy to get to and by no means convenient but they're perfect. And so is the wine.
Three separate picks, each spending a different amount of time on skins before being gently pressed. The wines were then blended in 2000ℓ foudre where they finished aging before being bottled.
Expect litchi and peach blossom with hints of grapefruit rind. Simple. Elegant. Resolved. And not anything like a dinosaur at all.
